I can't take credit for this idea, but it has worked so well for trying to increase the veggie intake my family gets. Sweet potato is considered a power food and there are so many health benefits to it that I try to incorporate it into our diet as much as possible. I keep little bags of pureed sweet potato in the freezer and pull it out as I need it. I put it in oatmeal, hot chocolate, spread some on grilled cheese sandwiches, on peanut butter and jelly sandwiches, and I will even put a few spoonfuls in mac and cheese.

I originally got the idea from Jessica Seinfield who put together a cookbook, Deceptively Delicious to get picky eaters to eat more veggies. Thankfully my daughter and Julio (my hubby but big kid at heart) have no problem eating their veggies but this makes it easier for me if I am in a rush. That way I don't have to prepare two separate foods. My daughter wanted oatmeal this morning so I whipped it up, threw in a few spoonfuls of sweet potato puree, and she has a nice healthy breakfast!
